I saw a meme on Twitter that said something along the lines of “you know it’s bad when millennials start cooking”. I normally cook quite a bit but lately, I’ve been doing it just that much more often and experimenting more because I’m absolutely sick of all our staples. I think it’s because we’re home all the time and this is one area where I can get some novelty in my life.
I wasn’t going to share here on the blog (I have been sharing a bit on Instagram) but I really enjoyed reading MK’s post on her quarantine cooking so why not. Maybe you’ll get some inspiration or find a new recipe to try.
All these recipes are vegan even if I don’t specifically call it out. We’ve been 100% plant-based since the summer and you can read more about our whole food plant-based diet here

Ok, let’s start with the most delicious and the least healthy because #comfortfood. But don’t worry, some healthy ones are also scattered in there too 😉
Loaded Vegan Nachos
I thought about these nachos all week long and they did not disappoint! I used the cheese sauce recipe from ItDoesn’tTasteLikeChicken and it was pretty good. It’s the recipe that I normally use for added cheesiness. Some vegan “cheese” is just so bad and will not cut it.

Vegan Mac and Cheese
I’ve just been craving comfort food day and night so I made vegan mac and cheese over the weekend. This is another “cheese” recipe that was actually really good and it didn’t require any hard to find ingredients. I will say that it was best right after I finished making it. It wasn’t nearly as good the next day. Overall it was a quick and easy meal that I’ll probably make again before all this is over. I served it with a side of steamed broccoli.

Loaded Baked Potatoes
I always forget about baked potatoes but I really like them whenever I make them. This is another recipe that I like from It Doesn’t Taste Like Chicken. Andrew doesn’t really like the beans on these but I’m a huge fan. Ted also loved this recipe and ate a full portion himself

The Original Green Soup
A really healthy soup that I used to eat All. The. Time. is this one from the cookbook Love Soup by Anna Thomas. My friend shared the recipe and her step by step how-to on this Instagram post last week and it inspired me to make a batch for myself. It has two big bunches of greens in it but manages not to taste like a salad blended up. It’s really good with feta sprinkled on top but I actually really like a squeeze of lemon juice as a garnish. No lemons at home but lime worked out well.

Creamy Creamless Tomato Soup
I’ve made this once before and I remembered it being the ideal comfort food but without all the heavy cream tomato soup normally has. It uses stale bread to add creaminess. It sounds so strange, I know, it’s so good. Plus it’s pretty easy to make with pantry staples

Rosemary Foccacia Bread
I was amazed at how easy it was to make this! And it tasted amazing! Like, it didn’t even last 24 hours, amazing. I ended up using Everything But the Bagel seasoning instead of rosemary as a garnish on top because I didn’t have any other source of larger grain salt.
