Ok, I’m going to admit that I’ve run out of steam when it comes to cooking. I still have no interest in our usual staples but I also haven’t seen anything new that a) looks interesting and b) I have the ingredients on hand. I’ve been looking through my Pinterest food boards and trying to find some new contenders. Recipes I Tried During Quarantine
Black Bean Burgers
I’m not super crazy about these but they are a staple in our freezer. I always double batch them so we can have them in the freezer for days when there aren’t leftovers for lunch. Tasty just not my favorite. Andrew really likes them. I use quinoa instead of brown rice.

Crispy Oven French Fries.
French fries are my favorite guilty pleasure. Salty, a little crunchy, what’s not to like. The last time that we had burgers, I went the extra mile and made steak fries to go with them. The trick is to soak your potatoes in ice water for an hour before baking. Oh and plenty of oil.

Veggie Pot Pie with Biscuits
Ok, let’s all just admit that this doesn’t really look that appetizing in these pictures. I promise you that it actually tasted amazing! The original recipe makes the pot pies individually in ramekins but I double batched the recipe (again, we eat leftovers for lunch) and made it in a casserole dish. I added extra veggies that I had in the fridge since they were about to go bad. Super tasty!

Basic Homemade Bread
I’ve officially hit the bread baking stage of quarantine. Honestly, I hit that stage a while ago but our grocery store has been out of flour the last couple of times I went there. But this week, they had flour so here we are, baking away. I make my bread dough in the Kitchen Aid which is nice because it’s relatively mess-free. This recipe makes two loaves. Always look for bread recipes that make multiple loaves at a time because you’ll eat the entire first one straight out of the oven. (or at least you should)

Tasty Vegan Peanut Butter Brownies
Honestly, what is there to say? Homemade brownies from scratch are amazing and really should be a part of any balanced diet. I used the Buzzfeed Tasty recipe but added a large quantity of peanut butter on top.
