Over Thanksgiving, I shared our plant-based menu and got a surprising amount of requests for the sources of the recipes. So that’s why we’re here today. I wanted to have all the recipe links in one place for you. I’m also going to include vegetarian recipes that are in our Christmas lineup as well.

Stuffed Acorn Squash

This was the main at our Thanksgiving. It’s easy to make ahead of time so you aren’t spending extra time in the kitchen instead of with your family.

Garlic Green Beans

So simple but I think they were one of my favorite sides from Thanksgiving and will be part of our Christmas dinner as well.

Mushroom Gravy

This was nice and savory but if I were to make it again I wouldn’t blend it. My blender isn’t strong enough and it ended up being chunky and not in a good way. I might even go as far as to strain the mushrooms, onion, etc out and just use the liquid next time.

Everything about this salad looks delicious. This will definitely be a part of our Christmas weekend.

Dairy-Free Tomato Soup

I know this isn’t a traditional holiday dish by any means but I think it will be nice and cozy for lunches over the weekend (Christmas is on a Friday). By all means, add a grilled cheese on the side. This American Test Kitchen tomato soup recipe is the one that I go for most of the time. They have a “secret” ingredient that adds creaminess without adding heavy cream. If you aren’t against dairy, try the Nordstrom Tomato Soup. It’s so good!

Cranberry & Thyme Vegan Cheese Ball

I made this last year and it was a big hit with both vegans and omnivores alike. It was really good on sandwiches the next day too.

Better than Broccoli Casserole

I made this for Thanksgiving and will probably repeat it for Christmas. It was so tasty and dare I say, better than regular broccoli casserole.

Mushroom Croissant Stuffing

OMG this looks AMAZING! From the croissants to the cheese and mushrooms, I can’t find anything not to like about it.

Butternut Squash Lasagna

It’s hard to find vegan or vegetarian mains for traditional holiday meals but I think that we’ll be going with a Butternut Squash lasagna this Christians.
