What I Ate Wednesday – One Pan Pasta

Hi guys!


Today I am doing a different take on the classic What I Ate Wednesday.  As I had a fairly boring breakfast (oatmeal, per usual. See what it looks like HERE) and then salad and some fruit for lunch. However I did try out a new recipe from MarthaStewart.com for One Pan Pasta. It looked easy and quick, perfect for weekdays when there aren’t enough hours in the day. 


All you need is pasta (I used gluten free. More on that later), half an onion, four cloves of garlic, several handfuls of cherry tomatoes, and basil leaves.



All chopped and ready to go!



Everything goes into the pot together and you are supposed to add four and a half cups of water then let it boil for nine minutes while stirring it the entire time.



I had trouble with way too much starch coming off the pasta that I used. Half way through the cooking process I had to add a bunch more water or else it would have been a total mess.



Here is my final product (after some tears and frustration). It actually turned out alright even thought it wasn’t as easy as Martha Stewart made it out to be. Nothing ever is, I guess.



With a lovely side salad to accompany it…



…Dinner was served!
