Hi guys!
I am back with another What I Ate Wednesday: Sugar and Gluten Free Version! It’s nothing super fancy but I guess that just goes to show how you can have dietary restrictions and eat just like everyone else.
Take a look!
Breakfast was fruit-filled including oatmeal with berries, a small papaya, coffee, and a couple glasses of water. I actually ended up not eating the papaya until later. Between the coffee and oatmeal, I get full pretty quick and that papaya made a perfect mid morning snack.
Lunch was the Nicoise salad (sans dressing) from the Nordstrom Cafe. This is the best salad that I have ever tried! Big words, I know, but it’s the truth. Loaded up with tomato, olives, capers, egg, green beans, onion, and salmon, this salad holds me over for the rest of the afternoon (and almost past dinner time).
Dinner was supposed to be a frittata with mushrooms and zucchini but ended up just being a scramble instead. I added spinach, tomatoes, and sliced avocado to finish it off. It didn’t look that appealing so I covered the ugly part in cheese. Totally works, right!

Your lunch looks really good! I want to try it! I've going gluten free for a while, but I'll pay more attention to the amount of sugar I have too.
